If a board is listed as food safe, it is safe to use for food preparation and serving. If it is listed as Not for Food Preparation, it is okay use it to serve food, but not for prepaation. Why the difference?
Our food safe boards are constructed using hardwoods and mineral oils that are good for this purpose, such as walnut, cherry and maple. Charcuterie or cutting boards will usual fall in this category.
The Not for Food Preparation boards may be constructed using woods that may not be safe for food preparation based on their hardness or what is naturally in the wood, such as cedar or pine. They can be used for serving food as you are not cutting into the board. They could be painted or finished in something that is not for good food preparation, such as polyurethane. Noodle boards (stove covers) and serving trays will normally fall into this category.
Our food safe cutting and charcutierie boards are finished using a brand of mineral oil that is specifically designed to be safe for food preparation. These boards have some specific care instructions.
1. Never put the board in the dishwasher. It should be cleaned with warm water and a mild dish soap.
2. The oil should be refreshed on the board on a regular basis. How often depends on the usage. If it is used and washed every day, it should be done about monthly. Just pour some of the mineral oil on the board and spread it with your hands across the board face. We recommend Howard Cutting Board Oil.
3. The board can be used as a cutting surface; however, you will need to use the oil more often if you do.
